Hi from Rosaria!

Naples is a city of a thousand marvels and one of the most ancient in Europe. It presents itself to those who visit it as a true open-air museum; one can wander around its cobbled streets and discover the most beautiful piazzas, all of which conserve elements of a city rich in history and culture. A stone’s throw from Piazza Vittoria, in a building from the 1930s, we enter Rosaria’s house. Love for food and care in making it are features which really stand out in the culinary tradition of the area around Naples. For this region of Italy, cooking is a real passion and eating is a sacred rite. Rosaria inherits a long family tradition of knowledge about ingredients, interest in the land and love for cooking. This Cesarina adores making food for her numerous family members and friends and loves following traditional recipes while experimenting with new flavors.

My specialities
  •  A variation of zucchini alla scapece (which are zucchini cooked with vinegar and various ingredients) to which she adds tiny mozzarella balls and green chilies
  •  Sciatielli with basil pesto, local-grown tomatoes and almonds

Rosaria's home is beautiful, her kitchen was perfect for the class. The goal was to learn how to make pasta and tiralmisu. We accomplished that, but we also got to get to know them and learn more about life in Napoli, the Christmas traditions for decorations and how they celebrate in thier home. We enjoy cooking as a couple, but we probably would not have tried making our own pasta before. Rosaria made it very easy to understand. We came home and bought a pasta machine and have already made 2 different batches at home. We plan on bringing our daughter to Napoli in the future and will definantly include another home cooking class in that trip as well!

Our host and her family were so wonderful! Rosaria’s son translated for her while my friends and I learned to cook some of the most delicious dishes we’ve ever had. Rosaria accommodated the vegetarians in the group and we Learned how to make her AMAZING twist on eggplant Parmesan. It was a truly intimate experience—one we will never forget! We left full and feeling like family.

Where should I start? To say this was just a cooking class doesn’t do it justice. I walked in thinking I’d learn to cool a few traditional dishes and leave with some recipes. That’s not the case; I left with a once in a lifetime experience that Rosario and her entire family created for me. Rosario was so warm and kind. She taught me how to make 4 delicious dishes. She’s patient and will show you how to make things step by step. She provided tips along the way and even threw in ideas beyond what we were cooking. I met many family members including her daughter, Clara. After this experiment and sharing dinner together, I truly feel like I gained a new family in Napoli.
