    Russian salad is a beloved cold dish in many countries, especially popular as an appetizer during holidays or on special occasions. Despite its name, its precise origins are still debated: one of the most widely accepted theories attributes its creation to Belgian chef Lucien Olivier, who worked in Moscow in the second half of the 19th century. His original recipe, known as "Olivier Salad," was a rich and sophisticated dish prepared with fine ingredients such as caviar, lobster, and truffles.

    The modern, more accessible version, the one we know today, consists of boiled vegetables such as potatoes, carrots and peas, mixed with pickles and hard-boiled eggs, all bound together by a creamy mayonnaise. In some variations.

    Born in the Romagna part of the region, Mara safeguards a cooking tradition perpetuated among the women in her family from generation to generation. Mara’s knowledge grew even more when she met her husband Alfredo’s mother. A wonderful cook who left her notebooks full of recipes and customs rooted in the traditions of the city of Forlì.  Her skills in the kitchen are those of a Romagnola DOC.  She has always cooked and breaths the air of the local gastronomy every day.   Mara has been host to some of the greats on the Italian theatrical scene: Rossella Falk, Giorgio Albertazzi, Alessandro and Paola Gassman, Gianmarco Tognazzi, Giuliana de Sio, Carl Anderson and many others. How so? Offering after-theater dinners to the theater companies that staged their shows at the theater in Forlì. Her excellent cooking, combined with her pleasant and cheerful company, have transformed Mara into a true legend of the Forlì after-theater crowd.
