The experience of learning how to make passatelli was an immersion into the heart of traditional Italian cuisine. I participated in a cooking class at a cozy farmhouse in the hills of Emilia-Romagna, where I discovered the charm of this ancient and delicious dish.

The day began with the preparation of the dough, a mixture of breadcrumbs, eggs, Parmigiano-Reggiano cheese and a pinch of nutmeg. The secret was to knead carefully to achieve a perfect consistency. Then, using a special tool, we created passatelli, thin cylinders of pasta with a unique flavor.

Maria lives in the historic part of the trulli and is one of the last families still living here. Amidst fairy-tale views and enchanted alleys, in our Cesarina's house, you can enjoy a truly unique experience. Maria discovered her passion for cooking when she was seven years old, and today she loves to prepare authentic, traditional dishes using produce from her husband's fields: quality, authenticity, and sustainability.
