The experience of learning how to make passatelli was an immersion into the heart of traditional Italian cuisine. I participated in a cooking class at a cozy farmhouse in the hills of Emilia-Romagna, where I discovered the charm of this ancient and delicious dish.
The day began with the preparation of the dough, a mixture of breadcrumbs, eggs, Parmigiano-Reggiano cheese and a pinch of nutmeg. The secret was to knead carefully to achieve a perfect consistency. Then, using a special tool, we created passatelli, thin cylinders of pasta with a unique flavor.
