Let's begin our culinary journey with tortellini, a masterpiece of Emilian cuisine. These small and delicious pasta parcels, filled with a tasty mixture of meat, cheese, and aromas, are a symbol of the skill and passion of Italian chefs.

To start, we will prepare the dough for fresh pasta, simply combining flour, eggs, and a pinch of salt. We will work the dough until it reaches a soft and smooth consistency, then let it rest while we focus on preparing the filling.

"My passion for cooking was born when I started attending cooking classes and reading books and magazines to learn this special Italian art. The dishes I prepare are recipes handed down to me by my grandmothers and my mother, and they are all dishes related to traditional Piedmontese cuisine. I take care of the 'mise en place’, also for the everyday table. I am lucky enough to live in the center of the city, a stone's throw from Piazza San Carlo, Piazza Castello, and Piazza Vittorio, in an apartment on the second floor of a period building."
