To start, we will prepare the dough for fresh pasta, simply combining flour, eggs, and a pinch of salt. We will work the dough until it reaches a soft and smooth consistency, then let it rest while we focus on preparing the filling.

The dishes I prepare are recipes handed down to me by my grandmothers and my mother, and they are all dishes related to traditional Piedmontese cuisine. I am lucky enough to live in the center of the city, a stone's throw from Piazza San Carlo, Piazza Castello, and Piazza Vittorio, in an apartment on the second floor of a period building."
