Unlike tortellini, which have a smaller shape and are generally served in broth, tortellacci are meant to be enjoyed dry, dressed with full-bodied sauces that enhance the dough and filling. They can have traditional fillings such as ricotta and spinach, but also more elaborate variations with porcini mushrooms, pumpkin, radicchio and gorgonzola, or braised meat.

The pastry, usually rolled by hand, is made with flour and eggs, according to the classic pasta recipe.
